In less than a month, I’m going to turn 40 years old. Instead of dreading the big 4-0, I decided to embrace it. And by embrace it I mean I made a list of things I wanted to accomplish before the big day. Some things were pretty easy, like use a coupon (which I did…for Bigelow Tea), others a bit more challenging such as #22, make Julia Child’s coq au vin (what the heck was I thinking…I don’t even like bones in my meat!!) and others, like #1, give coffee a chance, just seemed like the grown up thing to do.
Today, I decided to tackle #1 on the list. I was going to give coffee a real chance. So, thinking I needed to have what others consider “good” coffee, I headed to Starbucks and asked for a tall medium blend. I sounded like I knew what I was doing but let’s be honest, when I walked up to the counter the barista could tell I was a coffee virgin. She was kind and encouraged me to put some silly plastic contraption in the hole in the lid so I wouldn’t spill it. Thank goodness I did because getting out of Starbucks parking lot was dangerous.
I remember thinking that coffee tasted like dirt so I did the smart thing and stopped at Target for some International Delight Salted Caramel Mocha creamer. If my memory served me correctly, I wanted to have a back up plan. After all, I just spent two bucks on potential dirt water. Not an investment to take lightly.
When I got home and the coffee was cool enough for me to slurp (because that’s the sound I made trying to drink out of plastic lid), I tried to be brave and drank it without any additives and all those memories came rushing back to me. Dirt. Hot, dirt water. I instantly grabbed my ID creamer, added a few tablespoons, swirled and tried again. This time, instead of bad memories, I was greeted with a wonderful, sweet taste that reminded me of one of my favorite frozen yogurts from a local fast food chain.
Then it hit me. Why not make coffee flavored popsicles?! Not only could I get my caffeine fix, I could also satisfy my sweet tooth. It seemed pretty genius to me so I whipped out my daughter’s popsicle molds and made a few. I used a combination of 12 oz of medium roast coffee and 1/2 cup International Delight Salted Caramel Mocha creamer. I’m sure you could use less creamer but why? You’re turning this into a popsicle and it’s supposed to be sweet!
I am happy to say they were a success and the coffee/cream combination tastes even better frozen. See what happens when you’re about to turn 40? You turn dirt water into something fabulous.
